Ingredients
- 500 g Hokkaido pumpkin (peeled and cut into small pieces)
- 500 g apples (peeled, cored and diced)
- 1 lemon (juice and peel)
- 500 g gelling sugar 2:1
- 1 teaspoon cinnamon
- 1 pinch of nutmeg
- 1 vanilla pod (optional, but recommended for extra flavor)

Step 1: Prepare the ingredients
- Peel the Hokkaido pumpkin thoroughly, remove the seeds and cut into small cubes.
- Peel the apples, core them and cut them into small pieces.
- Wash the lemon, grate the peel and squeeze out the juice.
Step 2: Cook pumpkin and apples
- In a large saucepan, mix the pumpkin and apple pieces with the lemon juice and lemon zest.
- If you want to use the vanilla pod, cut it lengthways and scrape out the seeds. Add both the seeds and the pod to the mixture.
- Simmer the mixture over medium heat until the pumpkin is tender, about 10-15 minutes, stirring occasionally to prevent burning.
Step 3: Puree the mixture
- Once the pumpkin is soft, remove the vanilla pod.
- Puree the mixture with a hand blender until it has a smooth consistency.
Step 4: Cook the jam
- Add the gelling sugar, cinnamon and nutmeg to the pumpkin-apple mixture and stir well.
- Bring the mixture to a boil, stirring constantly, and let it simmer for about 4 minutes. Make sure to stir constantly so that nothing burns.
Step 5: Filling the jam
- Pour the finished jam into sterilized jars, close them immediately and place the jars upside down for about 5 minutes to create a vacuum.
Step 6: Let cool
- Turn the glasses over again and let them cool completely.
